Artichoke Bruschetta

Yum! Who can say no to a hot and cheesy artichoke bruschetta at a party? Not this Flirty Baker! I've included a basic recipe below, but I've also given you a few ideas of how to spice it up. Have fun! This is a great dip/appetizer to make into your own.

Ingredients:
1 6-ounce jar marinated artichoke hearts, drained, patted dry, chopped
1/2 cup grated Romano cheese
1/3 cup finely chopped red onion
5 to 6 tablespoons mayonnaise
16 1/3-inch-thick French bread baguette rounds

Place first 3 ingredients in bowl. Mix in enough mayonnaise to form thick spread.
Preheat broiler. Top bread rounds with spread. Arrange bruschetta on baking sheet. Broil until spread is heated through and begins to brown, about 2 minutes.

For other ideas:
  • add a few oz of fresh crab meat or even shrimp with the mixture
  • use 1/4 cup Parmesan cheese and 1/4 cup Romano cheese
  • use 3 oz of artichokes and 3 oz precooked and drained spinach
