Bacon Wrapped Dates with Balsamic Glaze

Nothing says comfort food like Bacon Wrapped Dates. They are both glamorous and rustic combining a few basic ingredients into something you could serve at a fancy cocktail party or to friends watching the big game.

The thing is, they are really easy. They look so fancy, but anyone can make them. Aside from assembly, they take 10 minutes to cook, and 3 minutes to be devoured. You could dress these up by adding blue cheese or even almonds, so have fun!

What I think makes this version special, is adding a glaze of balsamic vinegar over the final product. You get great style points and it adds a little sweetness that helps cut through the bacon and enhance the dates.

The amount you will need for each ingredient is tough to judge based on how many dates are in the package you purchase. I would recommend getting a pound of bacon, for each container of dates. You might end up with an extra slice or two of bacon, but I'm sure you will figure out something to do with the left-overs.

Ingredients:
1 lb. bacon, cut in half
1 package of pitted dates
toothpicks or skewers, soaked in water
1/2 cup balsamic vinegar
1 tbs. butter

Directions:
Before starting, soak the toothpicks or skewers in water for at least 20 minutes. It will help ensure that they do not burn in the oven.

Preheat the broiler.

In a small sauce pan, heat the balsamic vinegar on very low heat. The vinegar should emit wisps of steam, but not boil. Continue to reduce the vinegar for about 20 to 30 minutes or until reduced by half. At the end, add the tablespoon of butter and whisk in off of the heat. Set aside.

Take each date and wrap it in 1/2 a strip of bacon, securing with a toothpick. Place on a sheet pan lined with tin foil for easy clean up. Continue with remaining bacon/dates.

Cook the bacon wrapped dates for about 10 minutes under the broiler. Remove from the oven and place on a tray. Drizzle the balsamic vinegar reduction over the dates and serve immediately.

If you are adding blue cheese or almonds, slice open the dates and add the extra ingredient, then wrap the date with the bacon.
