Tomato and Watermelon Salad

Summer. To me that one little word means fruits and veggies, fresh from the farmers market, sliced and served in their own splendor.

Nothing sums this up like my Tomato and Watermelon Salad. Bright and cheerful watermelon, paired with earthy and sunshine filled tomatoes, with fresh goat cheese and a light sauce and voila! You've got a perfect side for a barbecue, or just on it's own for those hot August nights.

As a note, I always love to use heirloom tomatoes. They come in such great varieties, flavors and colors, you can really kick this dish up a notch on both presentation and flavors using great tomatoes.

Ingredients:
Thinly sliced watermelon
Thinly sliced heirloom tomatoes
4 oz. goat cheese, crumbled
2 tbs. balsamic vinegar
3 tbs. olive oil
dash of salt and pepper

Directions:
In a small bowl, whisk together the balsamic vinegar, olive oil and season with salt and pepper to taste.

Layer the slices of tomato and watermelon together on a deep dish. Top with the crumbles of goat cheese and then the dressing just before serving.
