Our house seems to have an endless supply of ripe bananas, so today I tried something new. Banana muffins, studded with mini chocolate chips!
Ingredients:
1 1/2 cups all purpose flour (reserve 1 tbs of the flour in a bowl to the side)
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (about 2 large)
1 large egg
1/2 tsp. vanilla extract
1/2 cup unsalted butter, melted
1/4 cup light whipping cream
1 cup mini semisweet chocolate chips
Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with muffin liners. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Put the chocolate chips into the bowl of 1 tbs of reserved flour and toss. Stir into the batter. This will help the chocolate chips from falling to the bottom.
Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. Transfer muffins to rack; cool.

I've made these again tonight - a couple of notes. The oven was hotter - probably closer to 350 and they took about 25 min, so just check them as they get close to finishing. Also, I used regular size chocolate chips which I'm sure no one will mind :)
